I only have forwarder addresses defined for my domain. Can I use Gandi's SMTP servers? If so, what do I use for the login info?

I think you have to have a mailbox in order to log in to the SMTP server. Create a mailbox, with some name, e.g. mailbox@yourdomain.com and log in using that. You don't have to actually use the mailbox for anything.
