Hello, I want to buy an VPS for my websites, my domaine name xx.fr is hosted by Gandi already, I wanted to know is it easy to setup any subdomain xx.xx.fr as the website for the VPS?

As far as I have done this you need to:
1) point the needed subdomain (eg. xx.domain.xxx) to the VPS's IP (you should get this from the VPS's page in your account)
2) configure your webserver to understand the subdomain so it knows which pages to show
That last part is done by editing the webserver's configuration (eg. with Apache2 and Debian: http://www.debian-administration.org/articles/412).
