How long before my domain is transfer and when can I activate the email address associated with the domain through you?

Each TLD has different procedures and delays, and so it is not possible to give a blanket answer to your question. Normally though (for .com, .net etc) a tranfer usually takes less than a couple of days, though can be done in a single day too - depending on a large number of factors (did you accept the mails? Did the registrar accept the outgoing transfer? Did the registry accept the transfer?).
