I don't find this process particularly intuitive, so this may be a dumb question - if I want to shorten my first name to the first initial for the Whois data purposes, I have to change the domain owner. Does this mean I have to create a second handle, i.e. create a second account?

To answer this question directly though, you cannot hide your information like this in the whois. Your whois must contain your full name and contact information. In the event even that you create a new handle with just an initial and change the owner of the domain to that handle, you run the risk of loosing ownership of the domain or even having it be suspended or deleted by the registry due to it being in violation of registration rules.
