What if I only want to change the email address of the existing administrative or billing contact? The current interface gives me a choice between Create and Search. That is, either creating a new contact (which means filling several fields with info that Gandi already has) or searching the list of existing contacts.

You must login with the contact in question, then modify this e-mail address like:
